Tender and juicy meat,
aiguillette du rump steak, is a long, conical piece, like a large needle, hence its name aiguillette.
Its long fibers and its delicate marbling, however, make them delicious steaks to grill or pan.
It is best to pan-fry the steaks so that their fibers flourish.
Also remember not to cook it directly out of the refrigerator: let it come back to room temperature for a while to avoid a thermal shock during cooking which risks contracting the muscle fibers and hardening the meat.
