Neutral emulsifier and stabilizer. Designed to provide consistency, stability, better texture to the masses. It guarantees an ideal product for incorporating air in the right amount and slows down the melting and formation of ice crystals. The product can be applied on the basis of water or milk and works naturally in the cold.

Ice cream recipe


-1 liter of milk
– 1 and 1/2 cup of sugar (250g)
– Topping (30g) or 120g sour cream (1 can) – Optional
– 1 tablespoon (shallow) neutral alloy (10g)
– 1 teaspoon of ethustab, emulsifier (10g)
– Select the flavor of your preference, according to the orientation dosage by flavor.

Preparation mode:

Book Emustab. Beat the ingredients in the blender for 3 minutes. Take to freeze (3 to 4 hours). Remove part from freezer and place in blender with 1/2 teaspoon Eustab (5g) and beat for 5 minutes. Repeat with the other part of the preparation. Return to the freezer and freeze until it is at the desired point.
